Whey-fed Berkshire hogs pasture-raised at Jacobs & Brichford in Connersville, Indiana. Dry-rub cured under sorghum, wild juniper berries, brown sugar, sea salt, black peppercorns then aged in oak barrels. Smoked over barrel staves. Fully cooked to heat & serve, not sliced. $10.75/lb (about 8lbs each)
