Berkshire hogs fed on
apples, walnuts, and acorns
raised on pasture at Cameron Farms
Since every Smoking Goose recipe begins on the farm, we're proud to begin this holiday special with Berkshire hogs raised on pasture and fed on apples, walnuts, acorns, and non-gmo grain at Cameron Farms in Lebanon, Indiana.

After hand-trimming these whole-muscle hams, we cured them under a dry rub spiked with vanilla beans and allspice. To highlight this delicious pork and holiday spice, each ham smoked slow and low over sweet pecan wood.

Trees and halls aren't the only things that should get trimmed this time of year. Decorate your Pecan-Smoked Heritage Ham with the house-made Indiana Sorghum and Indiana Apple Cider Glaze we include with each ham.

Fully cooked and simple to heat and serve, these limited-edition hams are only available by ordering online here. Be sure to place your order asap as quantities are limited!

Father's Day Features: treat yer pops

Wagyu Boneless Ribeye              available as 12oz steaks, about $35 each ($46.50/lb)

intensely marbled with supreme tenderness and flavor; raised all-naturally, humanely, drug-free, stress-free at Joseph Decuis in Roanoke, Indiana

Wagyu has only been available in the United States since the mid-1970s and authentic Wagyu remains a scarce commodity in America. While less than two percent of all beef raised in the United States meets the USDA quality of “Prime,” virtually 100% of Wagyu raised on the Joseph Decuis farm exceeds "Prime."

To produce this superior beef in an all-natural, drug-free manner, it takes two to three times longer to raise and finish Wagyu as compared to commercial cattle. Time and love are necessary for raising world-class Wagyu. While the consumer may pay more, authentic Wagyu raised naturally and humanely is the choice of beef connoisseurs.

Wagyu Bavette
available whole, about 1lb each, $19.50/lb

As the "butcher's best kept secret" steak, the bavette is the flap steak cut from under the flank. With delicious flavor, it delivers big bang for your buck when cooked on high, dry heat.
raised all-naturally, humanely, drug-free, stress-free at Joseph Decuis in Roanoke, Indiana

$25.75 (regularly $30!)
93pts and "Best of Year,” Wine Enthusiast
Mendoza, Argentina      89% Malbec + 6% Cabernet Franc + 5% Petit Verdot

Alejandro Vigil’s El Enemigo wines are worth jumping on. This is typically smoky and dark up front, with molasses, marzipan, and blackberry aromas. The palate clamps down with tannic grip, while flavors of oak, blackberry, tobacco, vanilla and spices end briary and with subtlety, which is what makes this powerful wine so good. An ideal pairing for grilled and well-marbled steaks.

YOLO Burgers                                   available in 8oz patties, about $20 each ($40/lb)

2oz seasoned foie gras cradled within Fischer Farms dry-aged black angus ground beef, seasoned with black truffle salt and red wine

Prep Secret: Bacon Club closing to make way for NEW Club

Goose is excited to announce a brand new “of the month” Club set to debut before Father’s Day – stay hungry and stay tuned for more.

To make room in the meatery for this tasty new Club, Goose’s six-year-old Bacon of the Month Club will be coming to a close this year. It’s been an amazingly delicious run—with more than 70 never-repeated bacon flavors—and all of us at Goose are grateful for the support of kindred bacon spirits over the years.

Some FAQs and answers…

1. I’m a Bacon Club member now. What will happen to my membership?

Existing Bacon Club members will continue to receive all the benefits of the Club through the duration of their currently paid memberships.

2. I’m a winner of the 2015 bacon flavor contest. Will I still get my bacon?

Yes, Goose guests whose nominations were selected for the 2015 Bacon Flavor Calendar will still receive their prize packs during their winning month.

3. I want to sign up/renew in the Bacon Club while I still can. What are the details?

  • Anyone can enroll in the Bacon Club through March 24.
  • New memberships are available exclusively in a single four-month term…so folks who enroll by March 24 will receive April, May, June, and July Bacon Club bacon.
  • New or renewing memberships for more than one term (or past July) are no longer available.*
*See #1 above: if your currently paid membership continues past July, you will still receive all the monthly benefits of the Club through the duration of your paid membership.
4. I LOVE bacon and am crushed by this news. Do you offer a support group?

Yes. Meetings are in the smoked section of Goose the Market’s meat case Monday – Friday, 10am – 8pm, and Saturday 10am – 6pm. The three step program includes Applewood Bacon, Lamb Bacon, and Jowl Bacon (and even some surprise bacons from time to time: duck bacon, anyone?). You are not alone.

And remember, look for details on the meatastic NEW CLUB soon!
